Palm sugar this is made from the sap of the palm date which is boiled and formed into hard round cakes. These are then grated or melted before use. Known as jaggery in India, it is often used to make sweets. In Thailand, it is used to give the sweetness in the traditional combination of sweet, sour, spicy, salty and bitter that makes Thai cuisine so popular.
