Saltfish this is a generic name for any dried and salted white fish. Traditionally it was made from cod, which is highly prized but often overfished, making pollock and other white fish more popular. Both are used throughout the world but are especially popular in the Caribbean and Mediterranean. The fish is rehydrated before eating and doesn’t taste salty.
