Scotch bonnet peppers rather delightfully named for their resemblance to the Scottish Tam o’Shanter hat, these squat little chilli peppers pack a real punch. Around ten times hotter than jalapeños, they are widely used in African and Caribbean cooking as they have a distinct fruity flavour as well as heat. They are often used whole in soups and stews to infuse flavour without the kick. They are not to be confused with habanero peppers.
