Shrub in cocktail terminology, a ‘shrub syrup’ is one containing sugar and an acid such as vinegar or lemon juice. Originally designed to preserve gluts of fruit before refrigeration, they are now primarily used to quench your thirst while stimulating your appetite so that sweetened drinks don’t become sickly.
