Stockfish this is dried cod, usually from Norway. The fish is opened out and has the guts and head removed, keeping the shape of the fish. It is air dried, rather than salted, until it looks like a stick. It is rehydrated during cooking and, while it is popular throughout the world, it is commonly eaten in West Africa to flavour soups, stews and staple dishes like yam. See them outside Kumasi Market.
