Tamarind this tree fruit is used throughout Africa, South East Asia and the Caribbean to add a sour, sharp and slightly sweet flavour to food. It usually comes as a block of pulp that must be soaked in hot water and then strained through a sieve to make a smooth purée. If you are in a rush, you can buy it ready-made but it’s not as good. It is one of the key ingredients in Worcestershire sauce.
