Taro the most common name for the plant Colocasia esculenta, its roots and leaves are used throughout the world as a staple crop. The tubers are used to make flour in both sweet and savoury dishes. The leaves are sometimes called ‘elephant ear plant’ due to their shape. Eddoes are a smaller variety of taro. It is known as cocoyam or dasheen in West Africa and the Caribbean.
