Xanthum gum often used in gluten-free baking, it is used to thicken and stabilise food. It prevents glutenfree cakes from crumbling to nothing when baked as it gives a similar stretch and structure as gluten. A fermented corn sugar, it is safe for coeliacs and those with gluten intolerance to eat.
