This is another good joint for roasting, preferred by some to the leg, as it is usually more delicate in flavour. Large shoulders are often cut into 2 or 3 strips. I like to braise, poach or steam the shoulder, or use it, cut in strips or cubes, for stews, pies and hotpots.
