Chinese Quick Stir-Frying

The Chinese cook asparagus in a most delicious manner. Cut stalks diagonally, making thin, slant-edged slices about 1½ inches long. Heat salad oil in a large frying pan or Chinese wok\ add asparagus; sprinkle lightly with salt, freshly ground black pepper and monosodium glutamate, and cook over high heat, stirring, for 2 or 3 minutes. Add 4 tablespoons chicken stock or water; cover pan and cook over medium heat for 3 to 5 minutes, shaking pan frequently. Season to taste with soy sauce or lemon juice. Serve immediately. Asparagus segments should be cooked through but still crisp.
