The common or green cabbage, sold everywhere, is bright green in the summer months, whiter, firmer and larger in winter. The Savoy cabbage - a bright, deep green in colour, with a curly leaf - is much more delicate in flavour. I like to use its tender leaves for stuffed cabbage recipes.
