A soft but firm Italian cheese-its yellow-cream richness is mild and delicately flavoured - Bel Paese is a non-aggressive cheese, delicious with fruit. Served almost exclusively as a dessert cheese, it can be used, if necessary, as a substitute for Mozzarella in certain cooked recipes. Bel Paese keeps well, its flavour tending to sharpen as it ages. Serve at room temperature.

Companion wines: Beaujolais, red and dry white Italian wines.
