These pear-sized Italian cheeses with a soft but firm texture resemble twin gourds more than anything. Pale yellow in colour, with an earthy tang, Burrini enclose a small egg of fresh butter in the outer layer of golden cheese. Cut it across in slices so that butter and cheese come with each slice. Burrini are strung together with raffia.
