A junior version of Edam, this fresh Dutch cheese can often be a trifle young and rubbery when found in the markets. Give it a little time to age before using it. Gouda melts well and is useful for toasted cheese sandwiches.

Companion wines: Beaujolais, dry white and light red wines, cider.
