A whipped milk cheese, golden yellow in colour, with innumerable irregular holes, Maribo is a mild, creamy Danish cheese, with a faintly acid flavour when young. Its flavour is strong and more definite when mature. Good with grapes. An excellent sandwich cheese.

Companion wines: Beaujolais and the red wines of Bordeaux, Bourgogne and the Côtes du Rhône.
