Tomme is in reality a whole family of cheeses, the most famous of which is Tomme de Savoie, a mild-flavoured, cream-coloured, smooth-textured, moulded cheese of the Savoy region of France. Other varieties: Tomme au fenouil, flavoured with fennel, and Tomme au marc de raisin, covered with a protective and flavourful layer of crushed grape pips. There is also a lesser known Tomme de Brach, made from eweโ€™s milk and with a quite different flavour. They are available all year round.

Companion wines: Moulin a Vent, Hermitage, St. Julien.
