Make your own wonton skins (or buy them from Chinatown) and deep-fry until crisp. Make a Nam Jim. Julienne some green mango. Add some crushed peanuts, coriander, mint, fried and raw shallots and fried garlic to the mango. Tea-smoke oysters on the half shell (see instructions for tea-smoking). Place some of the mango salad and a smoked oyster on top of the wonton skins. These are a delicious starter to a meal or canapé.
