Store eggs in the fridge, but let them come to room temperature before using them in baking. Ingredients mix together better if they are all the same temperature.
When you need only egg whites, you may find it convenient to buy pasteurised egg whites in a carton, available from well-stocked delis and supermarkets. Egg whites freeze well. The freezing helps to breaks down the protein – when you whisk eggs, you are unfolding the proteins so that you can get them to stick to each other, making them easier to whisk. You cannot freeze egg yolks, however, without mixing them with salt, sugar or acid to stop the proteins from sticking together.
