I have referred to specific varieties of tomato that I feel are best suited to particular recipes throughout this book. We are fortunate to have several varieties to choose from these days thanks to both hydroponic and glasshouse cultivation methods now widely used by farmers. While these methods produce wonderful results, they sometimes lack the full flavour associated with naturally grown tomatoes. The Roma variety is generally reliable and available throughout the year. Ox or Bullock Heart, Black Russian or Kumatoes, cherry and truss, as well as vine-ripened are all excellent for salads. A particularly great cultivar is marketed as βLove Biteβ and, at the time of writing, is available only from Fratelli Fresh stores in Sydney [see Suppliers].
