Ceviche, a dish made of marinated raw fish, chiles, and citrus, is believed to be one of the oldest dishes in the world, with no actual recipes for its earliest incarnations. Archaeologists discovered fish and chile remains in the stomachs of mummies at one of the most ancient sites in Peru, indicating that the combination of raw fish and acid (from the chiles) dates back three thousand years. However, it wasn’t until Spanish and Portuguese traders brought lemon and lime from Asia that citrus was added to the mix. As ceviche migrated throughout South and Central America, it took on a variety of flavors and techniques from different cultures.
