While there are traditional protocols for presenting caviar, you can have fun with it and create your own unique aesthetic. In our own presentations, we like to use an eclectic assortment of small bowls and spoons. Stemming from an era when only the rich ate caviar (and the rich only ate with sterling silver flatware), there is a lot of misinformation out there about spoons and caviar. As a metal, silver can react with caviar and cause a metallic, bitter taste. However, other metals, such as stainless steel, do not. The variety of materials we find to be both elegant and safe for caviar service include mother-of-pearl, animal horn, wood, ceramic, and stainless steel.
