When preparing a variety of deep-fried seafood, we find it helpful to have a guide for cooking times based on species, size, and temperature. We’ve arranged this chart in order of fry time, and for the most part, the guidelines will deliver a foolproof fish fry. We urge you to practice caution when deep-frying. Frying in smaller batches will take longer, but it helps ensure the oil maintains the desired set temperature and prevents the oil from overflowing the pot sides. As always, we recommend cooking attentively, with intuition and intention.
