I have a low tolerance for most bitter foods, and Iโ€™m not the only one. Some people have a genetic predisposition, which might be an evolutionary remnant that once prevented humans from consuming poisonous foods. Cocoa, coffee, and tea are all naturally bitter, but we like them because they act as stimulants. Many spices have a bitter taste, such as cinnamon.
