cassia bark The bark of the cassia tree, a relative of cinnamon (both are members of the laurel family) is old in long sticks. Most of the cinnamon sold in North America is in fact cassia bark. Cassia gives a strong cinnamon taste; it is the cinnamon used in Indian and Vietnamese cooking. See cinnamon.
