Thai curry pastes (red, green, yellow, and Mussamen) are now widely available in Thai and Laotian groceries in North America. Look for the Mae Ploy brand, or any other foil-packaged Thai curry paste, as long as it’s labeled “Product of Thailand.” Keeps indefinitely unopened; once the package is open, store well covered in the refrigerator.
