pomegranate concentrate Also known as pomegranate molasses, this is made from sour pomegranate juice cooked down with a little sugar. It is used to give a slightly sour tang to many savory dishes. It is sold in bottles in Middle Eastern and Iranian shops and, once opened, should be kept in the refrigerator. The most commonly available brand is from Lebanon and called Cedar’s; 1 plus 1, from Iran, is comparable.
