kombu (kelp) Kombu is a form of seaweed, giant sea kelp (Laminaria) that is a deep green in color and is sold in twelve-inch-long pieces, dried out and folded. It is very lightweight and is usually sold in cellophane packages, some from Japan or Korea, others from Maine. It often has a grayish coating, from crystallized salt. It is available in Japanese and Korean groceries, as well as in natural foods and specialty shops.
