nori Sold in flat or folded dry sheets, sometimes pretoasted (and then labeled yaki-nori in Japanese), nori is made from laver, marine algae that is dried into thin sheets. It varies in color from a dark green to purple to shiny black. It is most commonly used for wrapping sushi rice and is also used in shreds or powdered flakes as a condiment for rice. It should be toasted before being used for wrapping sushi; for toasting instructions, see Note.
