pilaf Pilaf is the Turkish and Turkic-language word for a flavored rice dish that is served on a platter. Partly cooked rice is layered or tossed with meat or vegetables or legumes, or a combination, then slow-cooked until done with a little butter or oil. The dishes in the pilaf family are close cousins of pulao and polo. See polo and pulao, and Index for recipes.
