tai gu choi A variant of bok choi, it is a flat Chinese cabbage about 4 inches tall and 6 inches to 1 foot in diameter, with white stalks and dark green leaves. It is also known as tatsoi, its Japanese name. Stir-fry or braise it, like bok choi. To divide, cut it into wedges (rather than pulling off individual leaves).
