To peel oranges neatly for salads or desserts, follow the simple procedure shown at left, top to bottom. First slice off the skin and bitter pith, cutting straight down (1). You should be able to do this in about four slices, to make a pentagon (2). Holding the orange over a plate or bowl to catch the juice, slice the knife down one side of a segment, inside the papery membrane, to loosen it (3). Then slice down the other side of the segment (4) to lift it neatly from the membrane. Repeat for each segment.
