Most vegetables can simply be peeled with a vegetable peeler or knife, but certain fruits and vegetables are peeled using hot water to remove the outer skin. Tomatoes are peeled by dipping them very briefly (10 seconds or so) in boiling water. This causes the skin to pull away from the flesh. Drain and cool immediately under cold running water. To peel almonds, leave them for about one minute in boiling water, transfer them to cold water until they are cool enough to handle, and slide the skin off.
