Any hot food should preferably be served on hot plates or serving platters. To warm them, simply place them in a moderately hot oven for 5 to 10 minutes, leaving the oven door ajar so they don’t heat too much. If the oven is being used, you can either place the plates or platters in the drawer under the oven to warm for at least 20 minutes, or set them over a large pot of boiling water and cover them with a large lid or another plate turned upside down. All these methods can be used for keeping foods warm as well; this is generally required when sauces using the pan juices are made at the last minute.
