These are very thin strips of about 2 in. (5 cm) in length. The easiest way to make them is to cut the vegetable into 2-in. (5-cm) lengths, then into slices about 1/16 in. (2 mm) thick. Pile the slices up two or three at a time, and cut them into strips 1/16 in. (2 mm) wide.
