When unsalted butter was a gourmet item and difficult to find in a supermarket, I omitted the salt in my baking since there was enough in salted butter. Now that I use unsalted butter exclusively, I put in some salt when baking to emphasize the flavors of the ingredients. Salt combines with sugar to bring out its sweetness and balance with it.
