Zests

If you don’t have a fresh lemon, orange or lime, don’t use a dried variety as a substitute for its flavor. Use another flavor like vanilla instead. People are sometimes confused when I say lemon zest. The zest is just the yellow portion of the rind. The white portion under it is bitter.
