Shao xing

Shao xing Chinese wine is made from glutinous rice fermented with water. (I have chosen to use just the words shao xing for reasons of space and because it is my preferred version.) It has a delightful dark straw colour and a unique flavour. Shao xing is widely available in Asian food stores and some supermarkets, but dry sherry is a popular and adequate substitute.
