Refined sugar, honey and syrups are also only used in this book when they are necessary to help create the particular taste and texture of an enriched dough.
For any recipe you see elsewhere that includes one form or other of sugar, ask why. If it is a good reason, in terms of flavour or texture, then go ahead. If it is a savoury loaf, then do you really need that extra sugar in your diet? Remember, yeast doesnโ€™t need sugar to feed on, as flour provides more than enough energy to keep it going.
