For Mediterranean-style soups, consider a drizzle of extra-virgin olive oil or one of the many infused oils that contrast with or reflect the flavors of the soup. For example, rosemary and garlic–infused oil for a bean soup or a minestrone, blood orange–infused oil for a carrot soup, and lemon-infused oil for a seafood soup. For many soups with an Asian twist, toasted sesame oil, hot chile oil, and coconut oil are good choices, depending upon the flavor and other ingredients of the soup.
