CELLOPHANE, OR GLASS, NOODLES are most commonly made from mung bean and sometimes from yam or potato starch, and are the size of vermicelli. These quick-cooking noodles (they need only a minute or less in hot water to cook) are often served with a brightly flavored broth topped with chile oil and ground meat.
