A 10-inch round comal (cast iron griddle) can be used on most stovetops and should last you a lifetime. I also use an oval comal that sits across two burners. A comal is great for conducting and retaining heat, and can be used beyond making tortillas. Use it for searing fajitas or charring corn on the cob for Mexican street corn. The more you use it, the more seasoned and non-stick it becomes. It will become a family heirloom.
