Oloroso (meaning “fragrant”) is a dark amber, wonderfully walnuty, rich sherry with a high degree of alcohol (about 20 percent). Olorosos don’t develop flor and take longer to mature than finos. While olorosos are also frequently sweetened (and labeled cream sherry), the best examples are dry.
