Cocido leftovers also make a tasty salad called salpicón. Shred or dice about 3 cups of beef, chicken, and veal from the cocido. Add a handful of cooked chickpeas and some diced boiled potatoes and string beans. Toss with thinly sliced red onion and lots of minced parsley. Dress with a good olive oil and some sherry vinegar or red wine vinegar.
