These are the best known of the crustacean soups. An authentic bisque is prepared by cooking the shells of the crustacean to make an aromatic broth and then pureeing some of the crustacean meat to help give texture to the finished soup. Most recipes also include cooked rice or sometimes bread crumbs to give the soup extra body, but modern versions like the shrimp bisque in this section are thickened lightly with a puree of aromatic vegetables. The texture of a traditional bisque may strike contemporary palates as a bit too thick; you may want to serve lighter, more brothlike versions instead.
