Granulated sugar is the refined white sugar extracted from either sugarcane or sugar beets. Although, chemically, sugar-cane and sugar beet sugars are the same, many bakers and pastry chefs prefer the flavor and texture of candies and baked goods prepared from cane sugar. The flavor differences may be minor, but beet sugar can sometimes be difficult to caramelize, so for butterscotch, caramel sauces, and other recipes requiring caramelization, use cane sugar.
