Refined granulated sugar is combined and processed with different amounts of molasses added back in to create light and dark brown sugar. Brown sugar has a moist, slightly grainy texture and a light, caramel-like molasses flavor. Desserts made with moist sugars like brown sugar tend to have a moister texture themselves, and stay fresher longer. Due to its moisture content, brown sugar can get lumpy and hard if it is left to dry out in the air. To prevent this, store brown sugar in a tightly sealed container or self-sealing plastic bag. Brown sugar is excellent in moist, sticky gingerbread and spice cake, coffee and chocolate desserts, and is the main ingredient in all butterscotch desserts.
