Unlike light and dark brown sugar, muscovado sugar is a raw, unrefined brown cane sugar. It is moist and slightly sticky with a strong, rich, slightly rummy flavor redolent of molasses and spice. It can be used interchangeably with light and dark brown sugar, and is definitely worth seeking out. Muscovado sugar is very popular in England, and is thus sometimes called “British sugar.” It is usually available in 8-ounce or 1-pound packets from whole-food and health-food stores, as well as some upscale grocers and kitchenware shops.
