Coconut milk is a creamy, unsweetened liquid made by soaking shredded, fresh coconut with an equal amount of warm milk or water. The mixture is steeped together and then strained, pressing out as much of the fat and flavor from the coconut meat as possible. You can make coconut milk yourself or purchase it canned from most well-stocked grocery stores or Asian markets.
