Obtained by pasteurising and spraydrying egg white to produce a hygienic powder that is free of water and foreign matter. It is used as a binding or coagulating agent in products that do not require the addition of liquid, and is useful in strengthening meringues. It is available from health food stores, specialist food ingredient stores, online or directly through egg producers.
