Gelatine is derived from animals, commonly pigs and cows, so is not suitable for vegetarians. It comes in powder or leaf form and has varying degrees of strength (bloom). At Sweet Studio we use gold strength gelatine leaves primarily for all cold-set jellies and also with other hydrocolloids for other types of jellies. Gold leaves are 2 g (approximately 1/16 oz) per leaf and should be used as directed in Studio Note 5.
